Vinegars
Balsamic: is obtained from high quality grapes which are aged in
chestnut, oak & mulberry wood casks. This gives it its unique flavour. It
is highly recommended for fruit salads, regular salads, and fish dishes. There
are very many levels of quality and prices.
Cider: is a ginger ale clear colour and is 5% acetic by volume.
Malt: is 5% acetic by volume, and is a golden clear color.
Rice: is used in oriental cooking as a dressing because of its smooth,
mild taste. When used in an oil/vinegar dressing for salad, the oil is reduced
by 2/3rds to get the same flavor when using white vinegar.
White: is the most commonly used vinegar. It has a clear color & is
5% acetic by volume.
Wine Flavoured: is a combination of white and natural vinegar. It is a
beautiful red wine colour. It is the predominant vinegar used in Caesar
Salad.
