Rice
Arborio: Is a white rice that is milled to remove the husk and bran, and
is the most widely used rice for risotto recipes.
Basmati: Is a very fluffy, light, fragrant white rice. Is grown in the
foothills of the Himalayan Mountains, and is milled to remove the husk and
bran.
Brown Rice: Is whole rice with the tough outer husk removed. It absorbs
four times its volume in liquid. It has a nutty flavour, and a chewy
texture.
Short Grain Rice: is a great dessert rice.
Wild Rice: interestingly, this is not really rice. It is a nutritious
aquatic grass that takes 35-40 minutes of cooking time. Is often mixed with
other rices because of its strong flavour.
