Molasses
Molasses is a direct product of sugar cane. There are 4 types of molasses:
Fancy: is used in baking. When using this type, the results are a sweeter
product, and is lighter in color. It can be used directly out of the container
as a topping on biscuits, breads & crackers,
Lite: is 40% less sugar than Fancy. Using this results in a subtler
flavor, softer cookies, and crustier breads. Has a lighter color than the
Fancy.
Blackstrap: is a direct by-product of the sugar making process. The
flavor is slightly bitter and strong. It can be identified by its darker color.
It is commonly used in feeding livestock, and has uses in the production of
industrial alcohol.
Cooking: is a blend of fancy and blackstrap. It is the more frequently
used molasses in cooking because of the stronger flavor. The finished product
will have a less sweet taste, and will be darker in color. It is the favorite
for use in gingersnaps.
